Fresh Vegetable and Tofu Stirfry


I had a container of tofu and a bunch of spinach and green beans in my fridge that were nearing the end of their usability period, so I decided to make a stirfry tonight. I actually did one the other day that was unreported in here, and found the tofu was a little bland (I only used sunflower oil and herbes du provence for flavour) so this time I marinated it in a pre-fab teriyaki marinade. I cut the tofu into bite-sized cubes, tossed them in a tupperware container, slathered them in the sauce and stuck it in the fridge for a couple hours.
I wanted to add a couple more colourful and chewable vegetables so I moseyed over to the grocery store and just browsed around for a while. I ended up leaving with a yellow pepper and a broccoli crown. (They had NO red peppers! Is it suddenly out of season?)
My stomach told me that I needed a bit more substance to fill me up so I started a pot of brown rice and went to do the dishes. By the time I was done, so was the rice but it stayed nice and warm in a covered pot while I cooked everything else.
I cut up the broccoli, green beans and spinach and put it all in the microwave (next time I'll do the spinach separately, because the others took much longer and I had to redo them). While it was cooking, I started heating up the pan and chopping the pepper.
I splooshed on an inexcessive amount of sunflower oil, and dropped in the pepper and the tofu, letting it fry for a few minutes before adding the broccoli and beans. Towards the end, I tossed in the spinach (but in the future, I'll wait until the last minute because it all shrunk and some of it stuck to the pan) and the rest was standard flip, stir, flip, stir until it looked done. Just before the end I sprinkled on a little of the herbes du provence which I though was risky because I didn't know how it would go with the teriyaki flavour of the tofu, but did anyway because I wanted an extra boost for the veggies.
I scooped half the rice into a bowl and topped it with half the stirfry, and we were off to the races.

It was delightful. The marinade ended up liiiightly flavouring the vegetables and the herbs actually tasted great. It was crunchy and smushy and *tasty* and filling. I didn't do anything to the rice so it was fairly bland but it went well with everything else and I don't think adding butter or other seasoning would have yielded a better result overall - this was healthier and what I really liked about it was the purity of the whole thing. Lovely.

Roasted Zucchini

Attempt #1

1 7oz. zucchini cut into strips
1/2 tbsp. freshly minced garlic
1 1/2 tbsp. citrus oil
Basil
Salt and Pepper

Preheat oven to 450F. Mix garlic and oil in a small bowl. Place zucchini on cookie tray, skin down, and spoon mixture over the pieces. Place on the top shelf of oven. Set timer for 5 minutes, and check for browning. Keep resetting for 2 or 3 minutes until done. Don't overcook. Remove from oven, place in a bowl and mix in basil. Salt and pepper to taste.

Very good! A liiiiitle mushy - maybe too much oil

Rice and Lentils

Attempt #1

1c. Brown Rice
1/2c. Lentils
3c. Water
1 can (284mL) Cream of Mushroom Soup

Pour soup into a medium pot. Stir in dry rice and lentils. Add water, cover, and bring to a boil. Reduce heat and simmer for 40 minutes. Remove from heat and let sit covered for 10 minutes. Fluff and serve.


** not covered perfectly. Big-medium pot was too big.
** added slightly more than 3c. It was WAY too much water. Next time try with 2.5c. Too mushy.

Fried Green Tomatoes

Tuesday morning at the video store. I closed last night and opened this morning so at least everything was where I left it.

I'm watching Fried Green Tomatoes. It's hard coming up with movies I want to see that aren't rated R. Not that I only like movies with sex and violence, but let's be honest - most of the best are chock full of it. (I mistyped "cock full of it." Interesting. Maybe I am all about that.) AND at 8 in the morning, it's hard to get into a wacky comedy or serious drama.

A man just came in and ordered 12 coffees. Now let me just preface this by explaining that I have only made and served one coffee before. Ever. And that I had only brewed one container full. And that I had already taken a large amount of it out, expecting few to no customers. Apparently this is quite a morning hotspot for all the construction style workers.
I burned several parts of my hands while pretending that it was totally cool... I had to brew two extra things while the guy was standing there, and then when another guy came in, had to brew another and got coffee everywhere and, I'm sure, looked like an idiot. This is quite the learning experience. But I did get tipped! (awkward, yet fruitful).

And I STILL can't make foam! The 12 coffees guy had a hot chocolate in there.... I was trained on it, but only in the sense that my boss says "oh yeah, hot chocolate. There it is." ... So I made it up. I hope it tastes okay for whoever gets it.

This has been a hilarious journey of screwing-up-fulness and scrambling-to-fix-things. I sound kind of negative, but all this stuff is fun. I like figuring it out.


I'm really craving a breakfast egg sandwich right now. I need some sort of travel butler.
