Roasted Zucchini

Attempt #1

1 7oz. zucchini cut into strips
1/2 tbsp. freshly minced garlic
1 1/2 tbsp. citrus oil
Basil
Salt and Pepper

Preheat oven to 450F. Mix garlic and oil in a small bowl. Place zucchini on cookie tray, skin down, and spoon mixture over the pieces. Place on the top shelf of oven. Set timer for 5 minutes, and check for browning. Keep resetting for 2 or 3 minutes until done. Don't overcook. Remove from oven, place in a bowl and mix in basil. Salt and pepper to taste.

Very good! A liiiiitle mushy - maybe too much oil
